Deb Morgan: I love cooking for lots of people—maybe you could guess that given my profession! But I also love having a small gathering of friends over for dinner. Sometimes I pull out all the stops and make a seven-course meal, and sometimes I enjoy treating my friends to a nice down-home meal, especially at holiday time, when we all seem to be so busy. Here’s one of my favorites that would make a wonderful vegetarian entrée this holiday season or could be enjoyed any cold winter’s night.

Vegetarian Lentil Loaf

Serves four.
Prep time: 1¼ hours.

1¼ cups green lentils
2 cups water
1 bay leaf
3 tablespoons olive oil
½ small onion, diced
1 small carrot, diced
1 stalk celery, diced
1–2 cloves garlic
1 teaspoon dry thyme
1 teaspoon dry oregano
1½ cups toasted bread crumbs
¾ cup grated cheddar cheese
1 egg
2 tablespoons tomato paste
1 tablespoons Worcester sauce
1 teaspoon cumin
1 teaspoon salt
Pinch pepper

Preheat oven to 350 degrees. Bring lentils to a boil in the water with bay leaf, reduce to a simmer, and cook until soft (about 20 minutes). Meanwhile, sauté onions, carrots, and celery in olive oil with garlic; add thyme and oregano at the end. When lentils are done, combine all ingredients in a food processor and blend until semi-smooth. Spoon mixture into an oiled loaf pan, cover, and bake for 30 minutes. Remove cover and bake for 15 minutes more. Let cool slightly before serving with millet mash and gravy.

Millet Cauliflower Mash

Serves four.
Prep time: 30 minutes.

1 cup millet
2 cups chopped cauliflower
2½ cups water
½ teaspoon salt
Parsley to garnish

Wash millet, wash and chop cauliflower, and place both in a medium sauce pot. Add water (or stock) and bring to a boil; add salt, cover, and turn down to a simmer for 20 minutes, until millet is soft. When done, use a potato masher and blend together. Sprinkle with chopped parsley to serve.

Both recipes go great with our vegan gravy.
