Kripalu Recipe: Chilled Mango Soup

Experience the ultimate summer refreshment with our chilled mango soup, a delightful blend of lightness and vibrant flavors.
Serves 8 to 10
- 2 quarts frozen mango
- 2 cups agave nectar
- 3 cups coconut yogurt
- 4 cups coconut milk
- ¼ cup lime juice
- 3 tablespoons grated fresh ginger
- pinch of allspice
- ¾ cup fresh mint, chopped
- 2 tablespoons fresh cilantro, chopped
Instructions: Thaw the mango in the refrigerator overnight. Combine all ingredients into a blender, reserving some of the coconut milk to adjust to desired thickness. Chill overnight. Garnish with fresh diced mango and a sprig of mint.
